He joined Taste Porto and lived happily ever after, surrounded by food and wine!\n\nWe played a quick Q&amp;A round with Ricardo, and these are the answers we got for you. Enjoy!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><b>What was your least favorite food as a child? Do you still hate it or do you love it now?<\/b><\/h3>\n\n\n\n<p>So my least favorite food when I was a kid\u2026 a lot of them. I was one of the pickiest eaters in the world!\nI can tell you I would survive with fries and eggs and sausages. That\u2019s what it was! Surprisingly today I have an amazing mouth and I eat everything (EVERYTHING) you put in front of me.\nTwo of the things I couldn\u2019t stand the smell, like \u201cTripes\u201d and octopus, are now on top of my list. I love octopus in every given way and \u201cTripes\u201d\u2026 I would like to eat it more often but I can\u2019t, otherwise, my food museum down here will grow a little bit.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/tasteporto.com\/wp-content\/uploads\/2020\/04\/ricardo.jpg\" alt=\"Taste-Porto-Local-Guide\" class=\"wp-image-2439\"\/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><b>What\u2019s the most exquisite pairing of food and drink in Porto?<\/b><\/h3>\n\n\n\n<p>The most exquisite pairing that I know in Porto, well it is not so exquisite, but I think it works really well: Francesinha and a Super Bock. You need a bubbly drink to clean your palate while you\u2019re having all these ingredients that Francesinha has. And that would be my perfect pairing.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/tasteporto.com\/wp-content\/uploads\/2020\/05\/Santiago-F-for-the-best-francesinhas-in-Porto.jpg\" alt=\"best-francesinhas-in-Porto\" class=\"wp-image-2439\"\/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><b>And what is an unusual pairing that really works?<\/b><\/h3>\n\n\n\n<p>A surprising match \u2013 and people wouldn\u2019t think so if they are not Portuguese \u2013 is our sponge cake (\u201cP\u00e3o-de-L\u00f3\u201d) together with \u201cQueijo da Serra\u201d a very creamy cheese that we have. It\u2019s our Master cheese. If you think about cheese in Portugal that will pop-up to your mind immediately. So \u201cQueijo da Serra\u201d and \u201cP\u00e3o-de-L\u00f3\u201d is a really amazing match.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><b>Do you remember the first time a wine really blew you away?\n<\/b><\/h3>\n\n\n\n<p>Hum, no! I love wine but there is nothing that sticks to my mind. I taste too many wines, to be honest. I do remember some occasions\u2026 that\u2019s the thing! It\u2019s mostly about occasions. And this is a bit like with food. Food is amazing but if you don\u2019t have the right people with you\u2026 that\u2019s not a thing you remember.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><b>If you had to eat one Portuguese meal for the rest of your life, what would it be?\n<\/b><\/h3>\n\n\n\n<p>It had to have beans. I wouldn\u2019t go for \u201cTripe\u201d. \u201cTripe\u201d could be a bit boring for the rest of my life, but it will be something with beans: Feijoada. Portugal has a lot of different types of Feijoada \u2013 don\u2019t think it\u2019s a Brazilian thing, we taught them how to do it \u2013 and it\u2019s a very (VERY) complete meal because it has different kinds of meat. It can have chicken, it can have pork, it can have beef \u2013 it\u2019s a stew of course. It has beans, carrots, onions, garlic, cabbage. So it\u2019s a good thing, it will be a complete meal and that will be my choice.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/tasteporto.com\/wp-content\/uploads\/2020\/05\/Portuguese-feijoada-recipe-scaled.jpg\" alt=\"Portuguese feijoada recipe\" class=\"wp-image-2439\" width=\"500\" height=\"400\"\/><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><b>Now imagine that you are cooking side by side with a person from the other corner of the world. Can you describe every step of the process of making your favorite Portuguese meal?\n<\/b><\/h3>\n\n\n\n<p>If I could replicate this recipe and explain it to someone who is on the other side of the ocean or another corner of the world\u2026 well, that\u2019s easy! It\u2019s one of my favorite, if not my favorite dish. You\u2019ll need a couple of carrots, two or three leaves of garlic, good olive oil.\nNow you have to chop everything, except the carrots \u2013 you have to slice them (thick ones).\n<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>First: Fry a little bit the carrots, the onions, and the garlic in the olive oil. You can add some spices at this moment, like paprika, pepper, and salt (these three are essential).<\/li><li>Second: Then you\u2019re going to add a little bit of passata, the tomato pulp. Add three tablespoons of tomatoes pulp and fry it for a minute.<\/li><li>Third: Now you are going to stretching it up with a little bit of white wine. At this moment you\u2019re going to add the meat.<\/li><li>Fourth: Then you add it to the rest and then add water. Let it boil for some time. I\u2019d say a couple of hours. Don\u2019t forget to add a bay leaf and don\u2019t add artificial broths \u2013 that\u2019s not a thing. If you add a lot of water and just let it simmer for a couple of hours, it\u2019d be ok.<\/li><li>Fifth: Then you add the beans. The beans should be 30 mins (around that time) inside the pot.\nYou also need to add white cabbage, which is essential for a good feijoada.<\/li><\/ul>\n\n\n\n<p>Got another question for Ricardo?
