{"id":755,"date":"2020-05-24T09:31:55","date_gmt":"2020-05-24T09:31:55","guid":{"rendered":"https:\/\/tasteporto.com\/?p=755"},"modified":"2024-11-16T00:43:52","modified_gmt":"2024-11-16T00:43:52","slug":"typical-portuguese-food-recipe-arroz-de-cabidela","status":"publish","type":"post","link":"https:\/\/tasteporto.com\/ja\/typical-portuguese-food-recipe-arroz-de-cabidela\/","title":{"rendered":"A Portuguese favorite: Arroz de cabidela recipe"},"content":{"rendered":"\n<p>In the North of Portugal, we see animals as a whole and, therefore, it is possible to find dishes that honor all cuts of meat, ranging from the noblest ones (loin, belly, ribs) to the &#8220;inferior&#8221; ones (tongue, heart, blood). <\/p>\n\n\n\n<p>This comes from our earliest origins back in the time when the Iberian Peninsula was occupied by Suevian and other tribes, which were used to eating what is now considered to be inferior cuts. These dishes are prepared mainly using pork and chicken and their common denominator is their ability to make unusual cuts shine, either through flavor or consistency. They are part of our rich cultural heritage, and in Porto, we take pride in this and even call ourselves <em>tripeiros<\/em>, which literally translates into tripe eaters! <\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"color:#2072bb\" class=\"has-inline-color\">Welcome to Tripeiro lands!<\/span><\/h2>\n\n\n\n<p>In order to introduce you to the gastronomical culture of Northern Portugal, we are starting a recipe series called <em>Tripeiro,<\/em> which is dedicated to tripes! Think about the stomach, heart, tongue, liver, blood, etc. the possibilities are immense, as is the pleasure of discovering all of them! <\/p>\n\n\n\n<p>Today we have a very special recipe from both Minho and Tr\u00e1s-os-Montes: <em>Arroz de Cabidela<\/em>. It consists of chicken rice jazzed up with chicken blood and vinegar. It is too-good-to-be-true, and we have made several road trips just to be able to enjoy this delicacy in Ponte de Lima! <\/p>\n\n\n\n<p>There are a few restaurants in Porto that cook this dish to perfection (you can find some suggestions at the end of the recipe), and we went to a very special place to get the right recipe for you: <a rel=\"noopener noreferrer\" href=\"http:\/\/www.tripadvisor.com\/Restaurant_Review-g189180-d4707887-Reviews-Taberna_Santo_Antonio-Porto_Porto_District_Northern_Portugal.html\" target=\"_blank\">Taberna de Santo Ant\u00f3nio<\/a>. So let&#8217;s hear a big <strong>thank you<\/strong> to Mrs. Herm\u00ednia! \ud83d\ude42 <\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><a href=\"https:\/\/tasteporto.com\/tours\/\" target=\"_blank\" rel=\"noreferrer noopener\">Pssst&#8230; Join our <strong> Food &amp; Drink Tours <\/strong>and discover a side of Porto that most tourists rarely see \u00bb<\/a><\/h4>\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"color:#2072bb\" class=\"has-inline-color\">Arroz de cabidela recipe<\/span><\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" src=\"https:\/\/tasteporto.com\/wp-content\/uploads\/2020\/05\/arroz-cabidela-recipe.jpg\" alt=\"arroz-cabidela\" class=\"wp-image-609\"\/><\/figure><\/div>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Ingredients:&nbsp;<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>1 onion<\/li><li>4 garlic cloves<\/li><li>1 whole chicken (preferably organic)<\/li><li>Some slices of chorizo and prosciutto<\/li><li>300 g &#8220;carolino&#8221; rice (rice with smaller grains)<\/li><li>1 Black beer (33cl)<\/li><li>4 tbsp olive oil<\/li><li>1 tbsp balsamic vinegar<\/li><li>1 tbsp salt<\/li><li>Pepper to taste<\/li><li>Parsley<\/li><li>1 bay leaf<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Arroz de cabidela recipe<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>First, you need to prepare the chicken. As you will need to use the chicken&#8217;s blood, it\u2019s best if you get the chicken from a butcher, since they sell the blood on the side, already blended with red wine vinegar. Even better would be to get it straight from a nearby farmer. In a supermarket, make sure that they provide you with the chicken blood before you order it.<\/li><li>Chop the chicken into small bite-sized pieces.<\/li><li>Peel and chop the onion and the garlic cloves and fry them in a large pan with hot olive oil. Add the chorizo and the prosciutto sliced very thin and keep stirring. Once the smoked meats and the onions are getting a golden color, add the black beer and the balsamic vinegar.<\/li><li>Add the chicken pieces, season with salt, pepper, parsley and a little bit of cinnamon (if you like, as this is an optional spice) and let it cook for about 10 minutes over medium heat.<\/li><li>Next, add the rice to the stock in which the chicken has been cooked. You might need to add some hot water, depending on the amount of stock you have on the pan, so pay attention throughout the rice cooking. Usually, carolino rice demands 3x the amount of water.<\/li><li>When the rice is just about to be cooked add the blood and vinegar mixture that you got from the supermarket. Mix well and simmer for 1-2 minutes.
