From North to South, soup is a staple of our cuisine, and it does not matter whether it&#8217;s hot or cold outside. So for today&#8217;s recipe, we&#8217;ve got &#8220;Rancho&#8221;, a soup from the Minho region that could be a meal in its own right. Here it is the rancho recipe, for 4 servings. <\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><a href=\"https:\/\/tasteporto.com\/tours\/\" target=\"_blank\" rel=\"noreferrer noopener\">Pssst&#8230; Join our <strong> Food &amp; Drink Tours <\/strong>and discover a side of Porto that most tourists rarely see \u00bb<\/a><\/h4>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>350 grams of chickpeas<\/li><li>4 large potatoes<\/li><li>120 grams of macaroni<\/li><li>250 grams of veal trotter<\/li><li>250 grams of pork belly<\/li><li>250 grams of &#8220;chouri\u00e7o&#8221;<\/li><li>250 grams of boiled beef<\/li><li>1 dessert spoon of paprika<\/li><li>1 dessert spoon of lard<\/li><li>2 decilitres of olive oil<\/li><li>2 onions<\/li><li>salt, to taste<\/li><li>pepper, to taste<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Rancho recipe<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Soak the chickpeas for a few minutes<\/li><li>Cook all the meat as well as the chickpeas in water and add salt and pepper to taste<\/li><li>Meanwhile, fry the chopped onions gently in the lard and olive oil<\/li><li>Remove the meat(s) when cooked and dice it in edible cubes<\/li><li>Dice the potatoes in small pieces<\/li><li>Add the potatoes, the meats and the macaroni back with the chickpeas (the mixture should be thick enough to stand a wooden spoon upright in it)<\/li><\/ul>\n\n\n\n<p>Season to taste and serve hot!
