{"id":642,"date":"2020-05-22T16:01:05","date_gmt":"2020-05-22T16:01:05","guid":{"rendered":"https:\/\/tasteporto.com\/?p=642"},"modified":"2025-08-13T11:28:09","modified_gmt":"2025-08-13T11:28:09","slug":"portuguese-favorites-cozido-a-portuguesa","status":"publish","type":"post","link":"https:\/\/tasteporto.com\/es\/portuguese-favorites-cozido-a-portuguesa\/","title":{"rendered":"A Portuguese favorite: Cozido \u00c0 Portuguesa recipe"},"content":{"rendered":"\n<p><strong>Whenever I want to show what Portuguese cuisine means in only one dish (a task which is both difficult and stifling) I think of &#8230; &#8220;Cozido \u00e0 Portuguesa&#8221; (literally translated: &#8220;Boilt a la Portuguese&#8221;). <br><br>Do not be fooled by its simple name though, this is considered by many to be the national dish (I cannot say 100% of Portuguese agree with this, but then again, try getting two Portuguese to decide what is the <a href=\"https:\/\/tasteporto.com\/ultimate-guide-to-sweet-portuguese-pastries\/\" target=\"_blank\" rel=\"noreferrer noopener\">best sweet <\/a>made in Portugal and you could be in for hours of discussion). <\/strong><br><br><strong><a href=\"https:\/\/tasteporto.com\/25-facts-about-portugal-foods-and-portuguese-eating-habits\/\" target=\"_blank\" rel=\"noreferrer noopener\">If you\u2019d like to explore more Portuguese foods, check out our list of 25 Portuguese eating habits<\/a>.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cozido \u00c0 Portuguesa recipe<\/h2>\n\n\n\n<p>This dish is composed of a great variety of ingredients cooked in abundant amounts of water: different types of &#8220;greens&#8221; (kale, savoy cabbage, &#8220;tronchuda&#8221;, etc), rice, potatoes (yes, we love our carbs), beans, turnips, carrots, sausages (&#8220;chouri\u00e7o&#8221;, &#8220;farinheira&#8221;, &#8220;moura&#8221;, etc), other types of meat (usually, pork) and sometimes with added bits of chicken (yes, we like our meat!). <\/p>\n\n\n\n<p>Getting hungry?  Here&#8217;s how to make it happen! <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients for 6 people: <\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500g of beef<\/li>\n\n\n\n<li>1 pig&#8217;s foot<\/li>\n\n\n\n<li>1 pig&#8217;s ear<\/li>\n\n\n\n<li>300g of pork chops<\/li>\n\n\n\n<li>1 <em>chouri\u00e7o<\/em><\/li>\n\n\n\n<li>1 <em>meat chouri\u00e7o<\/em> (it has a lot more meat in it than the regular <em>chouri\u00e7o<\/em>)<\/li>\n\n\n\n<li>1 blood sausage<\/li>\n\n\n\n<li>2 puddings (look for blood sausages such as <em>Morcela<\/em> or <em>Moira<\/em>)<\/li>\n\n\n\n<li>1 rice&nbsp;pudding (a special type of blood sausage in which the stuffing also contains rice)<\/li>\n\n\n\n<li>1800g of savoy cabbage<\/li>\n\n\n\n<li>800g of Portuguese cabbage<\/li>\n\n\n\n<li>2 turnips<\/li>\n\n\n\n<li>4 potatoes<\/li>\n\n\n\n<li>4 carrots<\/li>\n\n\n\n<li>300g of rice<\/li>\n\n\n\n<li>1 meat flavoured bouillon<\/li>\n\n\n\n<li>1 chicken-flavored bouillon<\/li>\n\n\n\n<li>1 vegetable-flavored bouillon<\/li>\n\n\n\n<li>Cooking salt (as much as you like it)<\/li>\n\n\n\n<li>Cloves (as much as you like them)<\/li>\n\n\n\n<li>1 can of white kidney beans (cooked)<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><a href=\"https:\/\/tasteporto.com\/tours\/\" target=\"_blank\" rel=\"noreferrer noopener\">Pssst&#8230; Join our <strong> Food &amp; Drink Tours <\/strong>and discover a side of Porto that most tourists rarely see \u00bb<\/a><\/h4>\n\n\n\n<h3 class=\"wp-block-heading\">Cozido \u00c0 Portuguesa recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Put the 3 bouillons, salt, cloves, and the chouri\u00e7o on a big pot with water and let them boil.<\/li>\n\n\n\n<li>Clean the meats (beef, pork chops, pigs foot, pig&#8217;s ear, and meat &#8220;chouri\u00e7o&#8221;) and add them to the pot to boil.<\/li>\n\n\n\n<li>Once all the meats are cooked, remove them from the pot and plate them.<\/li>\n\n\n\n<li>Wash the vegetables and add them to the water that was used to cook the meat. Let them boil for 5 minutes.<\/li>\n\n\n\n<li>Add the rice pudding, the turnips, and the carrots after cutting them into quarters. Let them boil for 5 minutes.<\/li>\n\n\n\n<li>In the meanwhile add the rice and some of the stock from the meats into another pot. Cook the rice as you normally would.<\/li>\n\n\n\n<li>Add the potatoes cut in half to the pot with the vegetables.<\/li>\n\n\n\n<li>Pierce the puddings and the &#8220;chouri\u00e7o&#8221; with a toothpick and add them to the pot.<\/li>\n\n\n\n<li>After 4 minutes remove the blood sausage.<\/li>\n\n\n\n<li>Remove some of the stock to another pot and add the beans, letting them cook for 2
